Description

A simple one-pan dinner with tender chicken, creamy sauce, and fluffy rice in about 40 minutes.


Ingredients

  • 4 boneless chicken breasts
  • 2 cups white rice
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, and sear them in the skillet until golden brown on both sides.
  3. Remove the chicken and set aside.
  4. In the same skillet, add the onion and garlic, and sauté until softened.
  5. Stir in the chicken broth and bring to a simmer.
  6. Add the rice and return the chicken to the skillet.
  7. Cover and cook for about 20 minutes, or until the rice is tender.
  8. Pour in the heavy cream and stir until everything is combined.
  9. Garnish with fresh parsley before serving.

Notes

For best results, use a heavy-bottom skillet with a tight-fitting lid. Taste and adjust salt after you add the cream.
