Description
A simple one-pan dinner with tender chicken, creamy sauce, and fluffy rice in about 40 minutes.
Ingredients
- 4 boneless chicken breasts
- 2 cups white rice
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt and pepper, and sear them in the skillet until golden brown on both sides.
- Remove the chicken and set aside.
- In the same skillet, add the onion and garlic, and sauté until softened.
- Stir in the chicken broth and bring to a simmer.
- Add the rice and return the chicken to the skillet.
- Cover and cook for about 20 minutes, or until the rice is tender.
- Pour in the heavy cream and stir until everything is combined.
- Garnish with fresh parsley before serving.
Notes
For best results, use a heavy-bottom skillet with a tight-fitting lid. Taste and adjust salt after you add the cream.
