Ingredients
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can garbanzo beans, drained and rinsed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup corn, canned or frozen and thawed
- 1/4 cup fresh cilantro, chopped
- 2 limes, juiced
- 3 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the black beans, kidney beans, garbanzo beans, bell peppers, red onion, corn, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the salad and mix well to combine.
