Description

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup corn, canned or frozen and thawed
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the black beans, kidney beans, garbanzo beans, bell peppers, red onion, corn, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
