Ingredients
- 8 ounces pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme
- 1 cup frozen peas
- Salt and pepper to taste
- 1 cup cheddar cheese, shredded
Instructions
- Cook the pasta according to package directions; drain.
- In a large skillet, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened.
- Stir in garlic and cook for 1 minute.
- Add cooked chicken, chicken broth, heavy cream, and thyme. Simmer for 5 minutes.
- Stir in the cooked pasta and frozen peas. Season with salt and pepper.
- Add cheese and stir until melted.

Notes
