Chicken Shawarma delivers bold, juicy flavor with an easy marinade and simple steps for weeknight dinners and gatherings.
Ingredients
- 2 lbs chicken thighs
- 3 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 4 garlic cloves, minced
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
- Pita bread (for serving)
- Rice or salad greens (for serving)
Instructions
- In a bowl, combine olive oil, cumin, paprika, turmeric, salt, and pepper. Marinate the chicken in this mixture for at least 1 hour, preferably overnight.
- Preheat your grill or skillet over medium-high heat. Cook the marinated chicken until perfectly tender and cooked through, about 6–7 minutes per side.
- While the chicken is cooking, prepare the garlic sauce by mixing minced garlic with yogurt and lemon juice in a small bowl.
- Once cooked, slice the chicken and serve it in pita bread with the garlic sauce, or over rice or salad greens.
Notes
For best results, pat the chicken dry before marinating to help the spices adhere. Don’t overcrowd the pan; cook in batches if needed. Let the cooked pieces rest five minutes before slicing. Thin, even slices create the classic shawarma layers in a wrap.
