Description

A simple, juicy chicken sandwich recipe with fresh ingredients and helpful tips for perfect results.


Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1/4 cup olive oil plus 1 tbsp for cooking
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 sandwich rolls or 8 slices of bread
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon lemon zest
  • 4 leaves romaine or butter lettuce
  • 1 medium tomato, sliced
  • 4 slices sharp cheddar or provolone (optional)
  • Pickles, red onion, or avocado (optional)


Instructions

  1. Mix olive oil, lemon juice, garlic, salt, and pepper. Add chicken and coat. Let sit for 15-30 minutes.
  2. Heat a heavy skillet over medium-high heat and add 1 tablespoon olive oil.
  3. Sear chicken for 4-6 minutes per side until a golden crust forms. Lower heat if chicken browns too fast.
  4. Remove chicken and rest for 5 minutes, then slice thinly.
  5. Toast bread lightly under a broiler or in a toaster.
  6. Mix mayo, Dijon, and lemon zest. Spread on bread.
  7. Assemble: spread, lettuce, tomato, sliced chicken, cheese, pickles or avocado, top slice.

Notes

Use a meat mallet to pound chicken for even thickness. Let the marinade sit at room temperature for enhanced flavor. Serve warm or at room temperature with a crisp side.
