Ingredients
- 4 boneless skinless chicken breasts (about 1.5 pounds)
- 1/4 cup olive oil plus 1 tbsp for cooking
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 sandwich rolls or 8 slices of bread
- 1/2 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/4 teaspoon lemon zest
- 4 leaves romaine or butter lettuce
- 1 medium tomato, sliced
- 4 slices sharp cheddar or provolone (optional)
- Pickles, red onion, or avocado (optional)
Instructions
- Mix olive oil, lemon juice, garlic, salt, and pepper. Add chicken and coat. Let sit for 15-30 minutes.
- Heat a heavy skillet over medium-high heat and add 1 tablespoon olive oil.
- Sear chicken for 4-6 minutes per side until a golden crust forms. Lower heat if chicken browns too fast.
- Remove chicken and rest for 5 minutes, then slice thinly.
- Toast bread lightly under a broiler or in a toaster.
- Mix mayo, Dijon, and lemon zest. Spread on bread.
- Assemble: spread, lettuce, tomato, sliced chicken, cheese, pickles or avocado, top slice.
Notes
Use a meat mallet to pound chicken for even thickness. Let the marinade sit at room temperature for enhanced flavor. Serve warm or at room temperature with a crisp side.
