Comforting baked potatoes topped with seasoned taco beef and melted cheese, perfect for a weeknight meal.
Ingredients
- 1 pound lean ground beef
- 4 to 6 medium Russet potatoes
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
- 1 cup shredded cheese (cheddar or Mexican blend)
- Sour cream and chopped green onions for serving (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for about 45-60 minutes or until tender.
- In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Stir in taco seasoning and water, simmering for about 5 minutes.
- Once potatoes are done, cut them open and fluff the insides with a fork.
- Spoon the taco beef mixture on top of the potatoes.
- Sprinkle shredded cheese over the top and return to the oven for about 5-10 minutes, until the cheese is melted.
- Serve warm, topped with sour cream and green onions if desired.
Notes
For added richness, mash a tablespoon of butter into the potato flesh before topping. Use even-sized potatoes for even cooking.
