Description

A rich, silky sauce made from pan drippings that enhances roasted turkey and various dishes.


Ingredients

  • Turkey drippings
  • 1/4 cup All-purpose flour
  • 2 cups Chicken broth
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (optional, e.g., thyme or rosemary)


Instructions

  1. Collect the turkey drippings from the roasting pan.
  2. Skim off excess fat, leaving about 1/4 cup in the pan.
  3. Place the pan over medium heat.
  4. Whisk in flour and cook for 1-2 minutes until lightly browned.
  5. Gradually add chicken broth while whisking to avoid lumps.
  6. Bring to a simmer and cook until thickened.
  7. Season with salt, pepper, and fresh herbs if desired.
  8. Serve warm over turkey.

Notes

For a silkier finish, strain the gravy. Warm your broth to avoid lumps. If the gravy is too thick, whisk in more warm broth a little at a time.
