Ingredients
- 1 pound fresh or frozen green beans
- 8 ounces mushrooms (cremini or white button), sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons flour
- 2 tablespoons butter
- 2 cups low-sodium chicken or vegetable stock
- 1/2 cup heavy cream
- 1 cup fried onions or crunchy breadcrumb mixture
- Salt, to taste
- Pepper, to taste
- Pinch of nutmeg (optional)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a baking dish.
- Blanch the green beans in boiling salted water for 2-3 minutes, then shock them in ice water.
- Sauté the mushrooms and onions in butter until browned.
- Stir in the flour and cook for 1 minute.
- Slowly pour in the stock while whisking to prevent lumps.
- Add the cream and simmer until thickened.
- Mix in the blanched green beans and season with salt, pepper, and nutmeg if desired.
- Transfer the mixture to the baking dish, top with fried onions or breadcrumbs, and bake for 20-25 minutes until bubbly and golden.
- Let the casserole rest for 5 minutes before serving.
Notes
For extra crispiness, add half of the topping before baking and the rest during the last 5 minutes under the broiler.
