Description

A classic side blending tender green beans, savory mushroom sauce, and a crisp topping, perfect for holidays or cozy weeknight dinners.


Ingredients

  • 1 pound fresh or frozen green beans
  • 8 ounces mushrooms (cremini or white button), sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 2 cups low-sodium chicken or vegetable stock
  • 1/2 cup heavy cream
  • 1 cup fried onions or crunchy breadcrumb mixture
  • Salt, to taste
  • Pepper, to taste
  • Pinch of nutmeg (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking dish.
  2. Blanch the green beans in boiling salted water for 2-3 minutes, then shock them in ice water.
  3. Sauté the mushrooms and onions in butter until browned.
  4. Stir in the flour and cook for 1 minute.
  5. Slowly pour in the stock while whisking to prevent lumps.
  6. Add the cream and simmer until thickened.
  7. Mix in the blanched green beans and season with salt, pepper, and nutmeg if desired.
  8. Transfer the mixture to the baking dish, top with fried onions or breadcrumbs, and bake for 20-25 minutes until bubbly and golden.
  9. Let the casserole rest for 5 minutes before serving.

Notes

For extra crispiness, add half of the topping before baking and the rest during the last 5 minutes under the broiler.
